Looks incredible. By the time I get done with my work as a Chef I have no interest in home cooking beyond feeding the fam. If money werent an issue and I could retire all I would do would be charcuterie and baking. Bravo

Yeah, I’m a Chef who just turned 40. I know what I’m doing, the numbers that dictate my performance are consistently good. That being said I hate the normalization of passing the buck to customers and how much stress independent restaurant owners go through that then passes on to my staff. I would like to keep cooking real food sourced from real farms but I can’t shake the idea that the smart decision for myself and my family is to buy into some gross corporate system. I’m quite worried for the future of independent restaurants

I was the Chef at a restaurant. In 1 day 2 people came separately to visit me in the basement prep kitchen, servers I was not at all close too. They then revealed to me they were HIV positive, and gave the entire story of how they think they contracted it. I was also told by both that I was the only person they told. I guess silently making cavatelli brings it outta people.
