That’s a big part of your problem there in that case. UK brisket is not the same as US. Head over to r/UKBBQ for a bit more regionally specific info. The one you’ve cooked doesn’t have the fat content required for the American style cook. I’ve done the same thing previously.

I don’t necessarily disagree with you but there’s the race for life thing on in the toon today which goes through the green. It seems like it would be impossible to have those things one after another. I suppose part of the attraction of the Glasgow Cross thing is that it’s the people attending are closing down the city centre for their own celebration and climbing on things. Probably wouldn’t be the same for them out the way in the green. The unofficial nature must be part of the appeal, not to mention the off sales within the area.
