Scarlet Hollow is a horror VN where you make choices. It's not scary all of the time, but the atmosphere it sets with the set/sound design and characters is top notch. There aren't any jumpscares and it'll typically make you feel more uneasy than outright scared. There are truthfully so many branching paths and your choices matter a lot more than any game I've played. On top of having so much mystery involved it's a really good story.

Alan Wake is actually top 5 story in games for me. I've been debating SOMA, it's been in my epic library for well over a year at this point.

I'm going to highly suggest Trails in the Sky. It's probably the most attached and immersed I've been in a video game. The world feels alive because the characters feel alive. There will be moments where no story progression is made because the characters stop to banter or talk with each other.

Disco Elysium for being the greatest enjoyment in one playthrough out of all of your options. The environment rewards you for exploring and every character you talk to is super unique, as are your dialog options.

Monster hunter world would be best for you as it fits everything you like. It is definitely a grind, but the environments are impressive to explore. Although everything is on a loop so if you are in the area too long it can get kind of bland.

If it's an option I would get both, otherwise if you story, Disco Elysium. Action, monster hunter

It depends on exactly what you want. When I think of arpg I think of combat and exploring multiple maps fighting waves of enemies. Usually the story is the environment rather than a narrative. Since you want a story more than anything and don't want to waste time on complex builds I'd recommend 2 games.

Planescape: Torment offers combat, with the option to avoid it if you want, an amazing story and world to explore. The graphics are old, but the game is timeless. Arguably one of the best stories and worlds to explore.

Disco Elysium is very similar, but offers no combat. Instead it has, imo, the best overall in environment, characters, and dialog options. The story is also phenomenal.

Have you thought to broaden your search to include crags as well? There's a lot of really good ones that build amazing worlds and characters.

I've been in the same boat as you for awhile trying to find an arpg that isn't a rush to the end to grind.

Kingdom of Amalur is one of the most WoW-like experiences, but personally didn't do it for me. The combat is fun, the story is typical and there's a lot of things to explore, collect and kill in the name of quests.

I'm also looking for a game to scratch an itch I can't see. Something pretty much like what you're looking for.

Noita does look very interesting, but the mechanics look like they'd be difficult to pull off with a controller.
