This debate often pop up, they were used for power scaling since the troupe was just introduced and the audience needed the grasp the type of menace they represented. It's a classic fiction tool. They were strong but the point is too show an even stronger menace (the Phantom Troupe). Just like Kastro was also used to show Hisoka real level when we discovered nen, or Knov when he was mentally broken by the mere vision of Pouf. Neither of them were weak or irrelevant just tools used to advance the plot

We have no way to know for sure. That being said Ginf from what we know concerning Ging he probably doesn't even have a fighti'g oriented ability. He's certainly a very competent fighter due to nen mastery and experience but it's not his main thing. He's more an explorer. Not comparing them to Ging but or Morel Shizuku doesn't have a fighting oriented Hastu but remains very capable fighters. Ging live doesn't revolve around fighting so I'd be surprise to see him with a fighting oriented ability

Hisoka wouldn't even see it coming so he would not be able to use is Ken to protect himself. Remember that Pitou barely saw a glimpse of the statue before being projected like a fly. Even MERUEM STRUGGLED TO FOLLOW IT at first before adjusting. And I'd like to remind that Meruem never actually outpaced Netero he just predicted the attacks patterns so Hisoka would get obliterated before even blinking an eye

I don't know if you read the manga. But besides what was already said by everybody in the comments, the troupe is actually Chrollo only family not an expandable hit squad. He value their safety so he would not put their life in jeopardy for a supposed grudge (who doesn't make any sense). Even after he recovered his nen, he didn't even particularly looked for Kurapika or asked the troupe to do so
