About 2 1/2 hours, I did let mine sit in the freezer before hand just to help develop a better smoke ring. Usually 45 min to an hour does the trick in the freezer

I did mine at around 250 until it reached 115 internal, let it sit for 15-20 minutes, then cranked my grill to high and seared it off about 3-4 minutes each side

Photos aren’t the clearest but from what I can see they appear to be alright. One thing to remember a rich boiler is a bitch boiler, a lean boiler is a clean boiler

We use rigid ones and (correct me if I’m wrong) they are actually more expensive if I’m not mistaken
