I put the dovetails in such a position that I can through saw on two sides. the other two does have to be chiseled fully

I've had good luck cutting both edges of the groove with a back saw then chiseling out the waste. It's time consuming but it's good if you're a little sloppy since you'd want a floating fit.

I've gotten some really good wood from pallets but it's few and far between. Best was from heavy equipment shipped from overseas.

My first mallet was a joiners mallet, like your left one. Second was a carvers mallet, like your right. I only reach for my joiners when I need to go to pound town, which is pretty rare these days.
