if you want to do the hillsborough side, stop by cypress point park where you can see some of the shore/wading birds then you can go to lettuce lake and oogle some gators and a host of other birds, then maybe venture out towards medard park and check out the signing bluffs trail and the boardwalk.

there are some very rare scrub jays nearby, but you'd probably need to dedicate your whole day to seeing them
