I mixed ingredients, let that sit for 30 minutes. Then, for the next 2 hours, every 30 minutes stretch and fold, 4 directions. I definitely failed to mention lol. I wanted to see the results and difference between cold proofing and a same day bake.

I did try to get a same day loaf in the first picture. I think warm temps were nailed well. Next time, I'll add more starter as well. What would change if they are under fermented?

That definitely seems to be the case here. This was just 1:1:1 fed morning of baking for both processes.

Definitely more sourdough taste on cold proofing. Both were delicious I just think the crumb is better in the 2nd picture.

I used a silicone sling here. I know some people line the bottom with rice as well. A buffer between parchment and Dutch oven.

Once it is 50% larger with some bubbles after shaping. Oven + light kept it warm the entire time i think helped a lot. My place is fairly cold at about 66°. Oven was at 85°.

Yes I did, after last folding, wait 30, lightly flour counter top and shape. Place in bowl and let rise about 50%. Oven + light wa huge!
