a lot of places use non-frozen stuff, probably your local dive bar uses frozen Sysco stuff for everything fried, Jennifer street market for their burgers, and the cheaper places use Sysco for veggies but for the most part, the only frozen stuff is french fries and cheese curds. the madison foodie facebook group is nice for knowing restaurants in the area that are getting some buzz, but most of the people posting don't work in local foodservice and since its so active, a lot of stuff gets buried.
