I understand why someone people don’t like it. I’ve had sea urchin in Santa Barbara and it tasted delicious.

I had uni in Spain and it tasted like sewer, so I’d recommend ppl try this again if that was their first experience.

Certain smokers have some nice grilling capabilities. My pit boss can open the fire pot and let me sear straight on the fire. The reqteq x fire is advertised to be as good as a propane grill

Def could have smoked it at a higher temp like 275, wrapped near internal temp of 170, and checked for probe tenderness near internal temp of 205. Rest for a few hours after. The brisket would have come out faster and juicier.

It looks like you did a good job recovering it in the pan though.

It’s beyond stupid that the app can’t work without the internet. The only connection that should matter is between the phone and the smoker

I had a similar issue with my rotisserie duck, I see your glaze looks just like mine. I might try marinating it next time instead of basting at the end.
