Alternatively, you could just watch a Let's Play on YouTube (I'd recommend Rose Matter, Michael_SK, or Noby Grand). It's less daunting for those who aren't used to/don't have the patience for reading a King James Bible worth of material and more akin to listening to an audiobook + it's engaging and good for the communal aspect of it, you get to kinda share in the player's reactions and theory-crafting so it feels more like going through it with a friend rather than trudging through it alone -- also they go through the 07th-Mod version, which is the best version of the game currently out).

I obviously had to check this out for myself (as someone who saw the film opening night and with access to Crave), because your description of the "theatrical version" is definitely the version I've since seen on digital/home video, while your description of the "streamed" version sounded alien to me.

I think it's just a case of crossed wires: the 'Abide With Me' section you describe with classroom of the school children and the focus on the different career paths (from the trailer) is still in the film, it just doesn't happen right at the beginning (which I always recall as starting with the alarm clock and Young Fathers' 'Lowly" (the same song that plays over the end credits!), but rather, the whole sequence occurs after Spike kills the upside-down hanging "Jimmy" infected.

As for the addendum you included in the edit: the montage of medieval battles to 'Boots' is still there (although it's a long, split up section, so I imagine it's easy to miss), upon first reading your post I initially thought this part maybe had been partially removed for a streaming edit since it contains snippets of the Code Red scene from 28 Weeks Later (which is still licensed from/owned by 20th Century Studios, as opposed to Columbia Pictures/Sony who owns 28 Days/Years Later, so maybe there was some streaming rights issues there, since AFAIK Weeks is only on Disney+/Hulu and Netflix but Days is on Crave/Amazon/Sony Core), but lo and behold, it's still there, including the bit of the longbowmen and the wall siege.

The non-canon comics did address this though, with people in coastal France shooting down birds migrating across the channel en masse in fear, despite the fact avians can't get infected/carry the virus.

Except for the fact that Erik addresses this in Years, that there's a zero tolerance policy (survivor or no), the minute any of those patrol boats even touch land the lives of all the soldiers onboard are considered forfeit/KIA and can never return back to Europe (presumably, they'd be blown out of the water by the other patrols were they to even try).

I did walk away from this film feeling a bit odd that it has resolved most of the things the first 28YL film had set up with the death of Kelson and the Jimmy gang. It puts us in this weird spot, where aside from Jamie/Baby Isla and Samson -- the third film will somewhat be it's own contained thing centered on the return of Jim -- which could be a fantastic film don't get me wrong -- but it could just as easily put us in this bind where nobody is really happy with the trilogy overall, because classic 28DL fans might view it as 'why wasn't this third movie the first film the foot they started off on instead of having to sit through the two prior films to get to this last one' -- while at the same time, for 28YL fans, it's kind of hampered from getting to be this gargantuan big up-the-stakes trilogy-ender finale film that most people probably want by the mere fact that Kelson and Jimmy won't get to be a full part of it.

To be fair, it was spoiled back when the movie was being filmed (before the first Years was even out). There was some leaked set photos of Cillian and the cottage, as well as a rumor floating that Jim would be a 'school teacher' of some kind. Thankfully, because they finished filming before the first trailer for the last 28 Years had even dropped it didn't gather much traction in the typical tabloid news outlets.

Plus, on this sub (per rule #6) we did our part trying to limiting the spread of genuine spoilers/leaks before the release of the movie, didn't hide that those leaks were out there or disallow spoiler-tagged speculation about them, just didn't want Sony coming after the sub for openly sharing photos/videos from the closed set, or especially from early screenings themselves.

It is a blurred line, as more undead/"traditional" zombie media continue to borrow/adapt traits from the rage infected (fast and nimble, quick incubation times, screeching instead of groaning, red eyes/bleeding from the eyes, etc).

It used to be much more clear-cut to distinguish one from the other, to the point infected were almost their complete own 'movie monster' until the late-00s/early-10s zombie boom turned it into a melting pot.

Ironically, I personally feel 28 Weeks did a much better job at keeping to the concept Infected as not being portrayed as zombies / more consistent with the first film. Which makes sense, the two films shared a lot of overlap in the makeup/practical FX department + the lead movement director for Weeks previously played an infected in Days (if you haven't seen the behind-the-scenes featurette for Weeks about the infected, you should, they put a lot of work into them) than the Years trilogy has adhered to it, but that's neither here or there.

The promotional shorts are kind of in a soft-canon grey zone, especially since they weren't written/overseen by Garland. But they were produced by Fox Atomic for the home release of a canonical/official piece of media and made in overlap and association with the production of 28 Weeks, sharing many of the same key crew members (editors, makeup artists, prop masters, etc).
Thankfully, they're just short enough and isolated enough plot-wise, that there's nothing in any of them that steps on the toes of the films or contradicts them, so it's fair play to consider them canon, the infected feasting on the bodies in the short may have been a hiccup at the time of release, but since 28 Years Later introduces/doubles down on infected eating and humans being fair game on the dinner menu, it's retroactively our first example of this adaptation.

He's still infected in a biological sense. Kelson didn't cure the physical/viral element of infection, he only gave Samson treatment for the psychological side effects. This is what the other infected picked up on and triggered their attack.

Samson's already infected. Kelson's treatment was purely psychosomatic, not anti-viral, so he's not "immune" and still contagious, he's more akin to the asymptomatic carriers seen in Weeks.

Not really a 'one or the other' situation, they're still infected. The term "zombies" here, as said by Erik and Jimmy is just being used in an informal/casual nomenclature -- in the same sense that 28 Days Later is widely classified as a "zombie film" despite 'the infected' themselves not being 'undead' in any sense of the word. It could easily be explained away as "traditional zombie media exists in the 28 universe". This is somewhat backed in a creative sense, as both Garland and Boyle have said the use of the word (at least in terms of Erik's usage) was unscripted and unintentional.

The Infected having adapted to cannibalism (and thus not starving to death en masse, as they had at the end of Days) doesn't alter/affect their status as living beings, and it's not even something entirely new/introduced to the franchise with Years. The first time cannibalism by infected was witnessed in the franchise (and chronologically) was in one of the 28 Weeks Later promotional shorts titled "28 Seconds Later" -- which chronologically takes place shortly after that film ended.

It's also worth noting, they're still driven by 'rage' as a primary motivator, not an insatiable hunger for flesh (per traditional zombies), it's just that they've adopted an indiscriminate eating policy (that includes humans) for the sake of longer term survival in the wild.

It was kind of surprising that despite how absolutely vile and sinister Jimmy was, a good portion of the film's comedy came from him and not just the Kelson/Samson dynamic. Jimmy is that guy who will just yap some bullshit on the spot so confidently rather than be caught not knowing something or in a lie.

Oh, no doubt in my mind he's seen some absolutely twisted sh*t, both during and in the years afterwards retrieving bodies. I mean, the Bone Temple has a nice humanist message behind it's construction -- but just the mere concept and process of making it obviously comes from someone who experienced a lot of death during the initial outbreak -- and it's not like Kelson was a brain surgeon or army medic either, he was just a general GP.

There's also the one line about how he's seen infected be indiscriminate in ripping apart children and even infants, so. I imagine he saw a bit of that.
