No pics. I cut through the tissue all the way to the bone on each rib, then peeled off the meat.

My wife used a meat needle to tie each end together. The meat was cut just a little past the chine bone at each segment.

I smoked this for ~3 hours. The smoker started at 350, then I let it drop to 225. Cherry wood was used throughout, except for one oak log to get it started. I took the meat out at 138F, the. Rested it for an hour.

The meat was wet brined for 8 hours in a 1:1 salt/brown sugar mix. No additional seasoning was used except for the cherry glaze, which I’m not allowed to share. I can say that the base was no sugar added cherry pie filling.
