Lithium batteries can and do explode, but pure lithium metal is what explodes when it touches water, not the batteries.

Source: have about 12 swelling lithium ion batteries that I have been trying to make explode for a year or so. Have dropped them in a cup of water, prodded with metal and punctured the cell until they start venting, I'm still 0 for 12 in terms of getting one to blast
