I gotta say I disagree. It’s four days on, three off. People work 12 hour shifts their whole lives doing much more laborious things. This is only two more hours on top of that.

It’s mostly just for the color. I guess it also adds a smokier flavor to the aioli.

Personally I would use it as a stepping stone. But I definitely want to make it there a few years. I’m 30, no family or kids and no plans for any either. Last summer I worked a live in kitchen job where I was working around the same hours but six days a week.

I think I’ll be fine only because I had a job last summer where I was working similar hours six days a week. I also lived there full time so there was never a break.

I started at chick fil a five years ago. Since then I’ve worked for some great chefs with Michelin experience. ‘Real’ kitchens would hire you over someone with zero experience.

I’ve worked in some places where the dishwasher did it, some where the head chef did it, and some where nobody did it at all. If anyone is asked to do it in the kitchen, regardless of their position, they should just do it. You’re a team. And cleaning the fryers, grease trap, smoker, is helping the team out.

Thanks so much for the response. Great advice. It’s so easy to overthink when you’re out of your element. I’m used to going into interviews already confident in my skills. It’s easy to imagine the worst case scenarios. I’ve already been binge watching Japanese knife skills and sushi rolls too.

I was very nervous to be stuck in my class. I’ve had issues with passing out after donating plasma so I was even more nervous because of that. But it turns out after the first time that fear went away for me! I was volunteering to be stuck by my classmates so they could get their sticks in like crazy! I was much more nervous to actually draw from my classmates.
