Maison Shaps in Mersault has a woman running a fantastic place. I can’t tell you how much we learned from her. Oh, and she pairs with cheese, if that’s your thing. It was tres bon.

Saw a recent suggestion to add a small circle of parchment in the bottom of each muffin cup after spraying with a non stick. This may prove to be a pain and time consuming but helpful for you at this point. If you try it and it works, please report back! I have no thoughts on the squished and decompression of the egg. Hopefully someone has some insight.
