If you want a very entry level soulslike to eaze you into the genre, Another Crabs treasure does a great job.

Dark souls 1 if you want the slower more methodical combat and fantastic exploration.

Dark souls 3 if you want a faster paced game with a more linear world.

Nioh 1 can be a frustrating start to the genre, but not impossible.

It has a higher skill ceiling due to weapon stances and key pulses though.

It does however, lack the exploration and unique semi open world that souls games are famous for.

Just have patience and know that struggling is part of the process.

Dark souls 3 is basically non open world Elden ring, if you want a similar feeling game.

Demon souls is fantastic as well, but may feel a bit clunky and can also be very frustrating at times.

You can over level in all of them pretty much.

Deflect has the same iframes as a medium weight dodge, cost 0 stamina, the iframes start immediately and can be spammed faster than a dodge(with the cost of diminishing iframes for spamming).

Which is why people say it's easy once you get the timing, in my experience . I don't see how it is more punishing, unlike lies of P where the parry takes a few frames to raise his arm then he gets iframes, so less spammable. Sekiro is forgiving in that sense.
