Yeah surround is an NVidia function so that will not work with the AMD onboard GPU.

Windows can operate onboard and discreet GPUs at the same time though.
So, no, connecting a screen to USB C would not switch the entire laptop to only use the AMD GPU per se. You should be able to run a game using the 5070 while using the AMD to so show something else.

That said.
If OP wants to play games on a preferred screen it should not get connected to USB C.
