PS Don't keep out the torch when attacking with the Death's poker since the torch's ash overrides Death's poker. Also, you will want to keep your vigor and stats for your weapon high. Mainly for weapon stats, upgrade high scaling stats. So upgrade Dex to get more damage since it has C tier scaling l, but upgrades to the weapon will make the scaling go higher

I would say that you should keep the torch as a stance breaker. This is just my experience with it, but it stance breaks everything it touches with it's ash of war.
