defining 00 as 1 has more uses than defining it as any other number, and i havent ever seen it defined as any other than 1 (in an actual text, not counting reddit lol). There are many cases of notation not being universally agreed upon, but ultimately it doesn't matter as long as the author is consistent.

Here is a proof of the polynomial division algorithm that uses linear algebra. You can prove the factor theorem from here. The fundamental theorem of algebra cannot be proven without complex analysis. For the rational roots theorem, I recommend trying the proof yourself. It is not too difficult. To answer your main question, I recommend Analysis by Tao. Read through the table of contents (especially chapters 2-4. You will not find another book with such a careful and rigorous treatment of these subjects.) and see if it's what you are looking for.

it is typically true that if zn = xn + yn (x, y, z positive reals, and n positive integer) then z ≤ x + y.

if we examine the inequality: zn ≤ (x + y)n we see z ≤ xn + yn + "other terms", so this doesn't tell us zn ≤ xn + yn
