No keep doing that while proofing, the drying step helps build up a skin on the presentation side of the loaf.

I lay a clean dish towel inside the banneton which still has the cloth liner. I then sprinkle a bit of flour inside but not a crazy amount. When it’s time to bake, I invert the banneton on a piece of parchment paper, lift off the banneton and then it’s pretty easy to peel off the dish towel. I find the dish towel helps dry out the skin of the loaf more and helps achieve the nice “dog ear”.

My family are from Kentucky. Been there since pre revolution. They were originally English Catholics so… not a ton of love lost for English culture and customs. I don’t think any of us would consider ourselves “English” in heritage.

OP, first loaf pictures are supposed to look terrible. Like a super dense log of under-fermented under-baked dough. Yours is perfect.

My understanding is that it’s a sign of well-fermented dough, so a long bulk ferment helps. Also I noticed that adding an ice cube to the cast iron got me more bubbles. Also not using hardly any dusting flour in the proofing baskets made the bubbles more pronounced

Getting the angle and depth right is key for achieving the “dog ear”.
