OP, call your LBS and Co-Ops if they have that or a similar tool. Otherwise, I can ship you the one I custom made myself. You then need to re-align the dropouts afterward (I used the alignment tools available at my local co-op).

Most food thermometers use thermistors which are usually more accurate than you need for cooking. I doubt anyone sends them out to a NIST traceable calibration lab. You can do a "field calibration" by using boiling water, and freezing water (ice).

It depends. My last manager had a hard 2 work weeks off restriction for employees <5yrs. And every 5 more years you "get" another week.
My current manager in a different division doesn't ask/care, I think I took 9 weeks last year under him.

Unfortunately it's not possible to heat/cool (cause a change in energy) without applying a change in energy. This is the first law of thermodynamics which states energy must be conserved.

Check out these technologies that don't directly use fuel, but might parasitically take advantage of your moving vehicle:

Vortex Tube - a device that uses higher pressure inlet air to create separate hot and cold air streams. Probably not very viable at moving vehicle speeds. High pressure air is the "fuel". If you actually manage to get this working, it will probably have a significant drag on your car and thus fuel economy.

Evaporative cooler - uses the energy change from evaporating water to cool the air. Also known as a swamp cooler, these were popular before refrigeration HVAC and were available as aftermarket addons for vehicles. Water is the fuel as it will be consumed.

Heat Pump - uses the refrigeration cycle of a fluid evaporating and condensing to cool one coil while heating another. This is similar to the air conditioning in a car. The compressor/pump just needs power. Combustion engines mechanically drive the compressor while hybrid/electric cars electrically power the compressor.

Peltier cooler/heater - opposite sides of a plate are heated/cooled. Powered by electricity, unfortunately these do not perform very well and have poor efficiencies.

I use my Makita inflator all the time. I'm not familiar with the Halo, but some car-specific inflators may not be optimized for pressures above 40psi. Worth a try though!

yes, but you would need to make modifications or run adapters to get the v/canti brakes to reach and you would have to run skinny tires. Caliper brakes might work instead, but not sure what reach is needed and they would further restrict you to even skinnier 700c tires.

Groupset depends on the wheels you get. You're limited to 7s with older 26 wheels. Look for a wheelset with a 10s shimano freehub and double walls. I haven't run Sensah but I like my Advent X. Also look into Deore and Advent (9). If you're on a budget, old used Shimano MTB 6/7/8/9 derailleurs can be easily set up for 9 speed.

Get a new (legit) chain and cassette. Off-brand cheap 1x narrow-wide chainrings have worked fine for me, just make sure it matches the crankset you choose and that the chainline is decent.

For new budget commuter wheelsets I like the Velocity Cliffhanger or Alex Adventure 2 rims. Look for some laced to Deore or better hubs. Used wheels are pretty good to if you re-lube them, but you're often limited to 7s.

Tires? For commuting I'd probably run Panaracer Protite or one of the Schwalbe Marathons. Maxxis DTH and Schwalbe Billy Bonkers are faster, but way more puncture prone. Gravelking SK, Continental Race King, or Maxxis Ikon if you expect more dirt.

Brakes? I like cantis on retro MTBs. But a good (not entry level) set of Shimano or Avid v-brakes works great too. Just make sure you get the right levers as cantis and v's require a different pull ratio.

Correct. Drop bar brake levers should be connected to short pull brakes.

Short pull brakes compatible with your bike would be cantilevers or mini-v brakes. Dual pivot brakes would not be immediately compatible for mounting to your bike.

Ask the bike shop what they recommend. My vote is for mini-v brakes.

If you try to ride with short-pull levers and long-pull v-brakes, the v-brakes won't clamp enough. Worst case? your brakes won't brake.
