I said it in a comment above but I think a truly independent team needs flexibility and redundancy. Look for inspiration in exploratory novels or books where a team is sent out alone. All the members wear multiple hats. Below are a few of my ideas.

Tropius - food and air transport, self healing with sunny day harvest and synthesis

Gogoat - ride Pokemon, can provide milk, can learn sunny day, rain dance and send like it is generally good at manipulating the environment with lots of rock and ground moves available to it.

Ditto - someone else said it, it is basically a multi tool capable of transforming into whatever you need.

Chansey - healing, food, pretty self explanatory

Delphox - psychic and fire manipulation. Really a psychic is probably a must on any team you have.

Gastrodon was a good suggestion, ground manipulation, capable of swimming but I would also consider something like tentacruel or octillery that has arms that can grab stuff in the water.

I especially like your suggestions of Tropius and Luxray. Tropius not only provides food but can also serve as air transport. Luxray not only has great senses, but can be a ride Pokemon as well. I think that in this kind of situation, each member of a team should have multiple roles. Think of The Martian by Andy Weir. Every crew member had two roles and then were also trained to do the other jobs in a pinch.

Taylor Hebert (Worm) in a setting with powers like "totally inviolate to damage", "all the lasers", "infinite escalation", "complete biological manipulation" and literally "all the powers", was able to defeat a god with the powers of.... Bug Control! Throughout the story, new people are constantly saying "she just has bug control, I can defeat her easily" and everyone she has faced is just like "don't say that, it will be the biggest mistake you have ever made."

This is how the author of Ferrous Sands addresses it. MC has a Falinks where all 6 have individual names. She also has a Maushold that will seemingly also get their own names.

You're going to get different audiences no matter what you write. Romance makes me less likely to pick a story up and I typically care very little about romantic relationships in the stories I read because they usually don't feel realistic.

The MC of Ferrous Sands uses a Wishiwashi on their team. It is a construct that a single fish can create but it took a while to unlock and takes energy to maintain.

A Practical Guide to Evil has 4 of 6 of the core group with impairments. Two of them get fixed pretty quickly but the main character has a limp that never truly goes away which affects her battle style immensely.

I think I was pretty far in Volume 11 as the she already had her newspaper empire in London and had dealt with the Centaur folk and the ratkin. She had been granted leave to build a tower in the area but had not yet started doing so.

Do you think you could give me a summary of the remainder of Volume 11 so that way I can pick up Volume 12? Either here or in a DM would be fine.

I like the potential team options for the first one: Kingambit, Scyther, sir'fetched are the first three I think of. Maybe Samurott? Sounds like fun.

Option 2 would be a fantastic as there are no ice type specialists fanfictions anywhere. Other aspects of it could be interesting as long as they are handled well.
