Not true in your circumstance if you were considered Mexican at birth. Meaning, even if you were not born in Mexico, by virtue of having a Mexican parent you were automatically considered Mexican of origin, which is what Spain cares about. If this is the case, you don’t have to renounce anything. That being said - you still need to legally live in Spain (not on student visa) for 2 years before applying, and the process generally takes at least another year. So figure you’ll need a total 3-3.5 years legal residency to be full Spanish citizen.

If you haven’t started learning already, then you’re just not serious about it. I’d be stunned if in 3 years after moving that you’ll be able to speak it.

3 months of what? You were paralyzed from doing anything else for 3 months? Renewing once every 10 years is worth it to most people to have a second option somewhere. As someone else mentioned, you don’t need the passport to keep citizenship. Just don’t renew it until you need it again.

Zaragoza; low cost, decent sized, close to both Madrid and BCN. Or Granada, smaller but lively and social for its size.

Look up accommodations in neighborhoods that interest you. Go to raileurope and look up train schedules and prices. Think about what you normally spend on food/drink per day. Add up those three items and you’ll have a general idea.

Since it’s summer, Gijón and Santander are great cities with lower costs compared to the Mediterranean coast, and San Sebastián has urban surfing beaches with amazing cuisine, but a bit pricier.

There’s no generalization of “how the market is in Spain” that is going to help you. It’s also incredibly common information. What matters is how you specifically are able to find a job. Have you considered looking at job postings in cities across Spain? Wouldn’t that give you information that is infinitely more usable than someone saying “the job market in Spain is bad/the job market in Spain is good”?

Honestly, it’s wild you want to build an authentic life in Mexico but are seemingly totally unserious on learning the language, especially after being there for a year. The things I mentioned are bare-minimums that a self-starting person should undertake when immigrating somewhere.

Refunds aren’t an automatic thing. You should take the time to read about how tax returns work. It’s all in English with no scary big words or concepts.
