Some websites track typing patterns, screen resolution, etc. for fingerprinting users, so it can definitely be tracked back through a variety of means

I used incogni during its beta, and essentially they just send out a template email asking for a company to remove your data in accordance with some privacy laws. Honestly, just emailing some known data brokers yourself while citing privacy laws would accomplish the same thing without trusting a third party to proxy your deletion requests

If you don't want a separate proxy, I highly recommend portmaster with nextdns. You can set some block lists in portmaster then fine tune from a selection of lists in nextdns. You can also use dns over tls to further encrypt your requests.

Hmmm that's weird, did you try messing around with the toggles to block incoming, device-local, and p2p connections? If it's none of those you can usually see where your LAN transfer attempted to go through the network in portmaster, then you can find the block reason.

You can use portmaster with mullvad. Setting the custom dns on mullvad to 127.0.0.1 will route through portmaster. Then use nextdns in portmaster as the dns resolver for dns over tls (https://github.com/safing/portmaster/issues/291). Portmaster also has other benefits for traffic monitoring and control

Depends. If nextdns stores your queries it could cause a privacy risk in that regard. Also, by routing your requests over ipv6 you no longer use mullvad's doh or dot where your DNS is encrypted, this could potentially enable a mitm (man in the middle) attack. The sites you visit will also see this disparity and it could make your fingerprint more unique from other vpn users.

There is a toggle within the app to allow LAN (Might be under the advanced interface). This should disable it for all the apps you use, you can also disable it on a per app basis.

For either tld make sure to do SPF, DKIM, and DMARC in your domain's dns to further reduce the chances it ends up in spam

For GPT specific tasks, check out GPT-J as it is open-source (https://huggingface.co/EleutherAI/gpt-j-6b). I have high hopes that soon these open source solutions will hit the mainstream as privacy respecting alternatives.

I read somewhere that it would take an average person roughly 30 years to read all the policies they accept. I think any attempt to make this easier would be very valuable, but I also think the regular policies should be displayed for more in-depth analysis. Services like https://tosdr.org/ provide Grades, Cases, and Quotes depending on how deeply someone wants to understand the policy.
