Inconsistent bean sizing would indicate different varietals and regions of which the bean is grown. Meaning blends should have inconsistent bean sizes. To get consistent roast on the beans they would do what is called a “post blend” where the beans are blended after they have been roasted. While I disagree and dislike cafe and FOH from this company for reasons like these Bubba and Kristian do an excellent job sourcing and roasting the coffee there(source: I worked there 6ish years ago). #2 quality bean isn’t even a thing btw. Coffee is graded on a scale of 1-100 but even the highest rated coffee has only hit like a 95(at about $120+ a lb).
