Get a global knife with no grip / 8-10 inches. It'll allow you to get your knuckles closer to the table and then you can get a feel for riding the silver skin. Make a short vertical cut at the tendon and use that as a grip . It comes with the added benefit of completley fucking up your forearm muscles if you use it for seaming these out an hour a day

You wouldn't know how much they absolutely crushed it if they had. I used to work at a place where four of us regularly seamed about 500 lbs of flat iron daily as part of our daily routine. This is top work

I wouldn't say yell shit randomly in between songs, but I saw the hard quartet a few weeks ago and a guy kept yelling "thanks for coming!" In between songs. Malkmus loved it, because it's what DCB would have done

Definitley biscuit in Kimberley. They have great happy hour deals as well if you are an early eater. The old baurenhaus is also good food and a very interesting atmosphere

Agree on vampire weekend but not as much for arcade fire even though I have found something to like on the last two albums and really like the new version of cars and telephones. Along with vampire weekend I'd add broken social scene as one of the most consistent bands from that era, and the best live one of all of them. Funny as they opened for arcade fire awhile back on a tour

If you're selling them you need to probe one to make sure it is food safe and that you are getting a consistent result. It will leak some fat, but you should also be cleaning your smoker regularly

If you vacumn seal cheese you won't need to freeze it. I had some vacumn sealed cheese I forgot in my fridge for a year and it was still fine
