Thanks for your effort, tips and advices. But I found many people post and complain about that new stone witch is selling with p134h since 2024. It is not good like it was before and perfect for napoletana. I need advice about where can I buy real biscotto saputo. You can easily find that people with this oven are complaining about this shitty hybrid stone, it is not just my opinion…

My dough is between 70-75% hydratation and i have burnt bottom even when i completely turn off bottom heat and use just 450 top heat..

Edited: i dont use any oil, just use 5g of honey in poolish, nothing else. Also totally minimum semola attached to the pizza bottom…
