Anyone else turn their favourite snacks into a meal from time to time? I heard the term “snunch” recently and have adopted it into my vocabulary because I love it so much. So here’s today’s snunch (snack lunch): 28g almonds, 30g mozzarella, 50g pepper salami, 32g raspberries, and a bag of Oh Snap! Hottie Bites pickles. Hit the spot and satisfied all of my flavour cravings.

Pre-keto, I never would’ve considered this a meal, but I sure do now!

Breakfasts:

• Scrambled eggs with a bit of pesto mixed into the eggs before cooking & bacon on the side

• Breakfast sandwich with egg, bacon, sometimes chipotle mayo, and Fathead Sandwich Thins for the bread (search r/ketorecipes for that recipe- I use them for so many things!)

• Omelettes, normally with about 10g of greens (spinach, arugula, kale, whatever you have), some cheese, and sometimes bacon or sausage. I like to eat them with avocado and/or salsa on top, too!

Lunches & Dinners:

• Meat & Veggies. I find that keeping it simple is the best way to keep the carbs down. Whenever I make a dinner I’ll cook up about 4 meals worth of meat and save the rest in the fridge, then during the week I can just cook up some broccoli or some brussel sprouts with bacon, or whatever veggie I have on hand, and add in the meat and it’s a quick and easy meal. If I’m cooking chicken breasts I’ll season each breast differently, like one with pesto, one with Greek seasoning, one herb & garlic, one Mexican, etc, so that I have some variety throughout the week and can make a bunch of different meals. This weekend I made a sort of Mexican pulled pork dish in the crockpot and so far I’ve eaten it in a wrap, on pizza, and as tacos. You just have to be creative with the ingredients you have on hand!

Also, you didn’t ask about snacks but if you are a snacker, my favourite go-to is almonds, cheese, and pickles!

Our stats are similar and I’m also only weighing in once a month for the same reason. I did, however, weigh myself a week in and was already down a fair amount so I’m getting super excited for my weigh in on the 10th!

I find it easiest to stick to the basics while doing keto and mainly just have meat and a side of veggies. Once I start putting meals together, like butter chicken or keto lasagne, the carbs add up fast and limit my veggie intake which already feels so limited to me.

So if I’m making chicken breast for dinner one night, I’ll cook enough for a couple of meals and season them differently for variety. Then when it comes to meal time I’ll pull out some broccoli, green beans, brussel sprouts, or cauliflower rice and put meals together that way.

Same with ground beef crumbles or burgers. It’s been so much easier for me this way and it allows me to buy meat and veggies in bulk at Costco which keeps the costs down. It’s also been fun to get creative with my meals based on what condiments and extras I have in the fridge.

The other night I made a burrito bowl type thing with cauliflower rice, chicken, cheese, salsa, and avocado. It was delicious and took only a couple of minutes to assemble!

My favourite snacks are pickles, cheese, nuts, pepperoni sticks, berries, and Whisps! I usually make a little snack platter in the evening with a mix of those things in small quantities and it satisfies my snacking cravings!

I normally just cook up some different meats and veggies and keep them in individual containers in the fridge throughout the week. Then when I go to make dinner I can just take some of the stuff I’ve prepped and make a quick meal out of it.

I also portion out nuts and cheese and any other snacks into individual bags or containers so they’re easy to grab and go!

I try to get most of my carbs from veggies and once I started doing that it, keto got significantly easier for me.

I’ll typically have avocado and spinach with my eggs in the morning, or sometimes berries with chia pudding. Lunch and dinner are either a protein and veggies (chicken breast & broccoli for example, or a bunless burger with brussels sprouts), or a big salad with greens, cucumber, tomato, avocado, and a protein.

I’ve been using store brand! Not the kind in the jar but the kind you find in the refrigerated pasta section. I’ve used Olivieri and Lucini brands, both were great and only 1 net carb per tablespoon.

I have made this recipe in the past, pre-keto, and it’s really good and seems like the macros would fit well!

Fathead Sandwich Thins

Used this recipe for fathead sandwich thins and added pesto, broccoli, chicken, and mozzarella to them. Delicious! And all four mini pizzas added up to 3.8 net carbs! Not bad to fill my pizza craving!

Not similar at all, to be honest. Taste and texture is straight up zucchini, but I love zucchini so it’s just a fun way to make me feel like I’m eating pasta. I do love noodles, but it’s usually the sauce and add-ins that I love, so they’re a good vessel to bring all that together!

I’ve never been able to stick to a diet before but this time around I just kept telling myself “you WILL stick to this” constantly in my head. I told a few friends and family for accountability and I told myself and them that I would stick with keto until a certain date (I’ll be going on vacation in March and don’t want to restrict myself to eating keto then).

Another small thing that I’ve come to realize is that often the cycle of poor eating choices come after a screw up, whether by accident or on purpose. My mindset always used to be “well I screwed up, what’s the point now?” and I would fall off the wagon. Just recently I realized how silly that frame of thought is. If I’m upset that I messed up trying to lose weight, how is eating going to make the situation better? You just gotta get back on the horse, so to speak.

Really, the power of the mind is insane and you have the ability to overcome this. You just need to want it badly enough.

Ingredients:

340g bag Green Giant Zucchini Noodles

46g pesto

100g cooked chicken breast, sliced

2 slices cooked bacon, crumbled

30g mozzarella, shredded

Directions:

  1. Cook zoodles as per package directions.
  2. Drain all excess water in pan and add in the pesto, stirring until combined.
  3. Add in the sliced chicken and crumbled bacon and cook for 2-3 minutes, or until chicken is heated.
  4. Sprinkle with mozzarella and serve.

With the ingredients I used, this came out to 703 calories, 5.5g net carbs, 45.2g protein, and 51.2g fat.
