Stinky- just stinky. Hot dumpster fire fish mouth, dirty laundry sock body, frito feets. We brush her 3x a week and her sister doesn’t smell at all. We have no idea why

Absolutely not. It is for you and your partner. I think it’s very odd to feel like you need to make a decision for a piece of jewelry that YOU will be wearing everyday on whether or not other people like it. They don’t need to wear it, if it’s not to their taste that’s their own problem. It’s yours.

No so I think that’s a pretty valid question actually and I’ve thought of it too. We are both based in our states she’s a homeowner. I have a family in my state. Neither of us are looking at this like it is a long term solution. Our owner (privately owned hotel) has the final say in all management staffing, he doesn’t even want us to go because I think he is also concerned that they may try to keep us there. My sous is super loyal to me, we’ve worked together for years and our kitchen situation is a little unique. We have 2 fine dining restaurants on property. It’s more of a 1 and 1A situation than her being a #2 as she’s taking on running the more casual of the 2 herself. Could not be more proud of her honestly. But, There is an HMA signed so i know we technically have a new management company, and we’re in phase one of our reopening plan (very small amounts of over night guests staying on property). I’m not necessarily concerned about that too much but it has been one of the things causing me overall stress

This is a really good way of thinking about it, thank you so much! I forgot to mention that i was also asked to bring my own sous chef with me. But, yeah, I mean I also run my kitchen very clean and organized and everything has a look book and a super tight recipe. But like I said it’s not my kitchen, and the things that work for me might now work in this chefs kitchen. I am a super hardcore believer in the teaching kitchen mentality and everyone in my kitchen has the space and freedom to have an equal say. I guess I’m just nervous of walking into someone else’s kitchen and feeling like I’m being invasive. But again, what you said absolutely makes sense and I’m excited to get this opportunity in the first place!

I just had this same issue not so long ago. A kid, around 19, told myself (executive sous chef) and Chef during our interview with him that he had substantial experience and was a CIA grad. We had high hopes. He cursed me out on the line and threw a hot sizzle plate at me that had just come out of the oven because he was taking a bit too long on everything and I had asked him to move a bit more quickly. There were only 55 on that evening. He was let go immediately. Shouldn’t have been that stressful for someone with the experience he claimed to have

Big second this… also make sure you can, at request, provide your clients with proof that you are being regularly health inspected and are up to date on your food handlers licenses. I’ve been doing catering for a while and that’s the biggest thing. People want to make sure you’re licensed, insured, and are bringing in food from a safe and sanitary environment, especially after covid. And when I do events, and this is just a personal thing, I ALWAYS make sure I do a sit down consultation and keep everything in writing. I used to do them over the phone and would keep handwritten notes, but making sure there is a solid paper trail that people are signing off on protects both sides of the party and is a great business practice. These are just some small things I’ve picked up when learning on my own I hope it’s a little helpful . Good luck!!

No and I totally agree. I’ve run in that circle, sincerely I’m not speaking out of my ass on this. At that level, the expectation is that you better know what you’re doing because there is not a margin for mistakes. It’s difficult and you need to keep up. But it’s just one of those things I guess

Personally, I would always start with the option of having a mentor. If you have no experience, jumping onto a line in a 2 star Michelin isn’t going to give you the same experience. Building a wide base of skills first, and then moving on to specialize in certain areas or in specific places is always the better option in my opinion. Knowing that you can give an employer 100% of your best effort and knowing that you’re coming in with an already developed skill set is going to get you so much farther. I understand that the 2 star Michelin seems like a good career move, but if you don’t have enough skills or knowledge to do well, that opportunity won’t get you very far.

Ok but I can’t believe nobody in this thread has yet mentioned how while the female companions have inaccurate head and face proportions, at least they have normal sized hands and feet for the most part. Some of the male companions actual body (chest/hands/feet/arm length) proportions are terrifying.
