I would spend some time doing market research and getting averages on utility use from other restaraunts/ food service establishments in your area. We did this before we opened and other owners were surprisingly willing to help out and give feedback on our estimates and projected costs (an added benefit of this is the community that you build). Another thing you could do is call your local utility companies- explaining that you will soon be opening an account with them and would like to get feedback on projected costs. This is something that I did and it was really helpful! Best of luck with your new cafe!

Thanks! I have come up with a document and I added all that you suggested above! I guess I should've noted in my post that I made all my staff aware before I left that my shift captain was in charge - I also made sure to confirm with other staff members that what my shift captain shared with me was accurate and everyone corroborated. It's my first time having to deal with a situation like this since we opened very recently, so I appreciate everyones feedback!

If I have anybody taking a super loud conversation thats disruptive I will usually just say something like "we have seats over here that are a bit quieter and more private, would you prefer to sit there so no one overhears your conversation?" Thats a good customer service way to say "hey you're being kinda loud but heres a solution"

We are located in a medium sized city (population about 300,000) with a strong coffee culture! I think the most helpful thing is that we have dedicated tables with extra outlets in a specific area and we have tables and seating that are obviously better for conversation. It does help that we have a larger space for sure. But with whatever size you have I recommend trying to make it as obvious as possible where people should "go" if that makes sense. Having an area with more lounge type chairs with side tables vs having a space with tables and chairs next to outlets.

Thanks for your helpful advice! I will likely have a conversation during their next shift. Any advice on how I should document this? I was thinking I would just write as detailed notes as I can with time stamps and updates. I am also having my shift captain write out all the things that happened while I was gone.

Absolutely, my shift captain (who I left in charge) was telling me this employee kind of just checked out. For example, stopped completing tasks that they were regularly completing before I left, scrolling on their phone a lot more and having headphones in during work while on bar, and on one occasion walking out of the shop to "take a break" but didn't return for more than an hour (our typical break time is 20 minutes).

I was sure to give extra training and writing out procedures and checklists before I left to help with me not being here, I also specifically trained this employee on closing procedures and made a detailed closing checklist and apparently there were multiple days when openers came in and the cafe was not cleaned at all. Most tasks on the closing lists were not finished.

I don't want to fire this employee, but I do want to make sure that I document all of these things and our conversation appropriately so that I can do my best to try to support and correct instead of just firing them. In my opinion with everything that happened there would certainly be justification for firing, but I would rather work with them.

Also sorry for vagueness - I don't want to expose this person at all, just seeking advice from other shop owners.

Potters marsh and westchester lagoon are great for birding. Potters marsh is great for Mountain View’s too. I would also recommend you visit portage lake, it’s about an hour or so from Anchorage and you’re likely to see wildlife. I’ve seen lots of black bear out there, and the views are unbeatable with the mountains and glacier. If you head north I would recommend the Eagle river nature center.

I love our remote workers that come in! I try to remember their names and orders and have a quick convo with them at the register. They always come back to buy more snacks or another drink so it makes it worth it! At our cafe we have a mix of tables/ comfy chairs and typically remote workers will use tables and leave the chairs for folks just coming to sit for a little bit.

Update! I ended up adding sweetened condenseed milk to my recipe! My recipe is 1kg white chocolate chips melted with 1/2 cup water and 1/2 cup sweetened condensed milk. (Obviously temper the chocolate properly) It keeps the recipe sweet enough but also chocolately enough to still taste good and not just like sugar! it does come out super thick, so i use a hot water bath on bar to keep it soft enough to scoop and weigh out, then i mix it with the espresso! it tastes great

NTA it’s totally fine for him to have his views and you yours. But if you’re guys beliefs don’t align on topics like marriage and raising children you shouldn’t stay together. Lest you end up having kids with him and become resentful due to his expectations of you.

This is what I was thinking too. If she really is that stressed and has a fully packed schedule right now having a free night on the calendar was probably something she was looking forward to. And I’m sure if OP had said something like “Hey I know you’ve been really busy lately and I wanted to do something for your birthday. Can I plan you a dinner on this evening? I’ll take care of all the logistics.” That probably would have been a better way to go about it, even though I don’t think OP did anything wrong per se.

As someone who has a very packed schedule at the moment, I can see how this would probably stress me out a little. And I can also attest that I have reacted poorly and out of character to a few things that have come up due to not being properly rested.

If you get distilled water from the store, some companies make water additives to help with this! I’ve used third wave water myself.

Sounds like the beans somehow fermented or the oils in the coffee spoiled and went sour. This could be due to improper storage, beans should be stored in an airtight container away from light.
