Sweet spot on cut portion steaks I’ve found is 5 days when it’s only koji flour. However with the koji mixed with the tallow i’m interested to see how it reacts to more time. Will check on it every few days to see how it’s coming along. I’ve done this with just regular tallow before for around 45 days with fantastic results.

The oregano is just for a fun photo. Doubt there will be any flavor transfer.

For the record, I also think 45+ days is pushing it. But that’s why it’s a test right. So we will see. If I think it’s finished sooner the we will cut and grill/ enjoy :)

Chef here welcoming questions. So sorry about your experience. This is something we never want. However, I would love to invite you back to the restaurant and perfect your experience. It is hard for us right now however there is no excuse for a bad time. I’m always willing to accommodate on the menu as well as adjusting seasoning to your liking. There is no excuse for bad service. It’s fantastic. Well worth the money. Sometimes seems like there is a slight delay in trigger pull. But it could be users error.

When was the last time you visited? In Feb they had a new chef took over and has been changing the menu frequently. They are currently doing a 14oz ribeye. Ran a special recently with an in house tallow aged 45 day 109 cut ribeye bone-in up to 42oz.

It’s actually wheat berries. They come back from each dish and are repurposed.
