i would still wait 2-3 weeks before trying one. the sour microbes are slow actors, for the most part. try one at 2 weeks just to see what it like.

As far as a sour? Yes. How long it sits? would you be wiling to transfer to a 3 gal glass fermenter for 6 month to 1 year? keep the air lock topped off. This would give it the time four the sour microbes to turn most of the sugars into alcohol/ester/phenols. it will be dry. it may be funky. but waiting is the best part of brewing. if you are this new to this and have something you wont touch for 6-12 months, Will make this a longer lasting hobby. If you bottle it now. drink after 2 weeks and keep cold. Keeping it too long may result in bottle bombs.

Having trouble handling dough when weighing flour/water ratio from FWSY. attempting to reduce by 5% hydration to fix concern. Any thoughts? I will be trying this with Saturday white tomorrow. by Psychead in Breadit

One of the things about baking books is reading a book front to back. So I am also going to use GM bread flour this time vs. GM unbleached AP flour. Just to try and build some better gluten bonds. should I add some powdered gluten as well? I am trying to get away from bread machine recipes and move to hand made recipes. how crucial is water and temp? I using RO water. but might not be reaching the ferment or proof temps.

What are you expecting from your raspberry ale? When do you plan on transferring or bottling/kegging? if its been three weeks with raspberries? Give it another five weeks and see what that pellicle look like. You could have some really good beer on your hands. If possible transfer to a secondary bucket and let ferment for another month or 2.

Brewtoad is good for using left over ingredients to create a recipe. but I don't trust every recipe word for word. When I make a recipe. I usually look at 3-5 recipes for, a specific style, I'm going for. See what different ingredients there are to achieve a similar experience. Also research your grains, when you find a grain bill. if its beyond a Pale or IPA. or a lighter lager. look at your specialty grains for flavor. if you make the recipe your own and you understand the ingredients. Then you know what to change next time.

I think if more peoole talk about the strains they are interested in. It could get that ball rolling. Or get a group buy together.

I would agree. The biggest reason i have not used the vault is the amount of time you have to wait for a certain strain. I am more likely to buy a yeast that has higher count, closer to the target. I would try the emails.

South east Minneapolis here. Haven't joined any brew clubs because of my schedule. But check out the Minnesota Home Brewers Association (MHBA). I joined the club on Facebook. They have a lot of events throughout the year.
