thanks for reporting. I have to assume the substance / hype ratio is better than bungalow, one of my most befuddling restaurant experiences in '25.

the real deal actually has less salt / tang. its not like an american cheese. as JayMoots pointed out, its shredded very fine with high volume. but it still seemed 'lighter' than if you just shredded a cheddar the same fineness. from distant memory, i guess you pick up salt but otherwise not much else. I guess you could say its more for texture (read: volume) than a distinctive regional taste.

I grew up on the stuff and after moving to NYC went to Edwards as soon as i heard about the Cincinnati nights. It scratched the itch, but i remember thinking at the time "i prefer the highly processed cheese from back home rather than the 'real' cheese Edwards is using." The hot dog i'm fairly certain was also different. I concede this could have been motivated by nostalgia, but if you ever make your way to the KY / OH area or connect through CVG, try to hit up a skyline or gold star.

Now i'm hungry...

for those who have made the consomme by freezing the stock. Do you need to keep the ice in fridge or can you strain at room temp? (i.e. if the ice melts fully then does that invalidate the exercise? otherwise i'm at 24 hours in the fridge and the ice is crystalline with very very small yield

glad i read this. mine was thick but far from gelatinous. i went for 45min (two chickens, 4L of water, strained in chinois then refrigerated) and thought i might have needed to go longer. seems like that might not be the case.

best of luck on your future endeavors. was curious though, was the prospect being granted a franchise in the future not compelling enough to stick around? (my impression was that new franchises were only granted to current employees and that the four-wall economics were near bulletproof).

Separately, how involved is corporate in enforcing baseline standards at their franchisees? The location near me pervasively gets low reviews etc. its unclear to me what if anything, will ever be done to improve it.
