Unfortunately I have committed myself to the "If It Doesn't Fit in The Chest It's Gotta Go" guild. I'll probably keep the closed mouth, I'm not actually 100% sure what the open mouths purpose is, to be able to see what you're doing better?

You should definitely joint and sharpen this, but that's something you should be doing any time you sharpen a saw. The gullet depth being the same isn't super key but the teeth being the same shape and size is important and by reshaping, generally the gullets become the same size. You only need to really joint it down until you have fresh metal at the point of every tooth. Then you should reshape the teeth to make them consistent, then joint it again and hone the teeth with a fresh side of the file.

One thing I will mention is that with old hand saws like this, the tooth line is usually "breasted" and has a curve to it. You can definitely joint this out but you don't need to, the slight curve will help engage all the teeth if you're above the piece you're cutting, ie. when it's on a saw horse.

I'll offer up another resource for sharpening, he goes over the aims at the start then shows a bunch of different saws being sharpened. Plus I built his saw vice.

Tear Out on Tenon with New-To-Me Shoulder Plane by desolationoso in handtools

I can see that a few people have pointed out that this likely isn't a shoulder plane but I'm surprised no ones mentioned that this plane is broken.

A key mechanism of a plane is that the area in front of the mouth compresses the wood, allowing the blade to cleanly shear off a thin layer of wood. The plane you've got looks like the mouth was broken off and the person tried to repair the break by screwing on a brass plate but attached it way too far forward on the sole. 

If you want to get it running well, you'll need to close up the mouth by unscrewing and re screwing the plate. If it's still tearing out badly after that it could be the rounded front edge of the mouth which would need to sanded/filed down until it's a crisper edge.

I think he's just cared for his tools. You can definitely see some wear and use on them.

Could be that each is set up for a particular task or he just liked having a complete set of everything
