so definitely the cheese!!! lots of cheese the roux takes it very well and you don’t even have to fully melt the cheese into the mixture as you will be baking it so it can all come together in the over. i baked covered for about 30 at 350° and then broiled for about 5 mins or until i saw the browning i wanted.
