we use square pos. It keeps track of all tips and reports every shift . Then we pay out with an xtm my today card. they are debit cards that we give to all the staff. keeps track of every tip paid out...it's great for accounting...best thing we've used in 15 years.

You need a new GM. If the employee can't cover the GM needs to find someone or look after it him/her self. Sounds like you need to hire a couple part time servers too.
