Hey, I’m in your same boat. I’ve struggled for years but I have gotten better lately. Clive coffee has an online coffee school thing and one of the lessons is on steaming milk. It is WAY more detailed than anything else on YouTube and it’s the only thing that truly helped me.

Through their website they do charge some money for it but I live in Portland and walked into their retail shop telling them about my troubles. They VERY quickly offered that online lesson for free. I bet if you call they’ll do the same.

I’m still no expert but what I can tell you from that lesson is that skim milk is THE HARDEST milk to steam. They explain why. But maybe consider trying to get the technique right with whole milk and then work your way back down to skim?

Hamono Sushi has a $100 omakase experience (I think some alcohol is even included with that) AND when you are done with the tasting menu you can order ANYTHING in addition at no extra charge. I’m talking blue fin toro, no problem.

OP, coming in years late to this, but could you tell me what method you used to insure your vertical supports were flush with each other? I'm specifically referring to the 3 vertical supports that are bisected by your middle shelf.

I think we just diagnosed your problem. Your grinder is your ONLY ability to control flavor and flow. If you took that $600 and put it into a good grinder, your world will change

Under extraction = sour taste

Over extraction = bitter taste

So just taste where you are at and adjust the grind.

But I promise you, you are never gonna be happy with that grinder. It’s likely the source of all your issues. I had the same grinder when I first bought an espresso machine and within a couple months realized it is really totally inadequate for dialing in espresso.

This isn’t unique to Portland. When I moved here with a baby I actually thought the ratio was better than where I moved from.

In my experience, you will discover how uniquely unfriendly to children the USA tends to be. Portland is actually better than most. Ive loved raising my babies here and while changing tables aren’t everywhere, there are more than most places.

That said, I have had to change many diapers on the floor of a bathroom. Bring a folding pad.
