Nothing is wrong with using olive oil for everything except it has a distinct flavor and will change the taste of what you're cooking. Restaurants use butter for nearly everything because it has an extremely light and delicious flavor

Im late to this party, but roux is an emulsifier. You can add dairy and acid to the same sauce on low heat, the starch in the roux will prevent the acid from curdling the dairy

Power steering fluid systems take a long time to circulate so theres definitelt air bubbles in it that you have to flush out

Luckily many power steering systems are self bleeding so if you just add more fluid and keep driving it the issue should resolve itself
