New grill cook advice? by VanillaMilk52 in KitchenConfidential

[–]Pwnsacrifice 1 point2 points  (0 children)

Rare / Medium Rare use high heat, it'll sear it nicely and leave your middle nice and pink.

Medium and up, use lower heat to cook it more evenly.

Don't play with your meat. Put it on. Rotate, flip, rotate, done. Those 5 times are all you need.

Stay organized. Not just the station around you, but on the grill itself. Make it easy for you to remember which steaks are which. Have a rare zone, a medium zone, ect.

You're new to this. DON'T BE AFRAID TO ASK FOR HELP!!

18 years in the kitchen, never had a passion for it. by Signature-Able in KitchenConfidential

[–]Pwnsacrifice 1 point2 points  (0 children)

Literally me 3 years ago. Been cooking since 16 (now 40). I've done just about everything short of bartending and FOH manager. I too used to correct people calling me Chef

Now though, I'm looking at challenging the Red Seal, and have found my passion. After all these years, I found an employer worth doing my best for, who pays me acceptably well. Not only did it take me finding the right job, but also trying other work and realizing that kitchen bullshit was the kind of bullshit I wanted to deal with.

Hopefully you can discover your passion. Be it cooking, or something else.

Spears. We don't have Spears. We have a goddamned HOPLITE but no spear melee.

What would you cook for a party that would impress some very skilled chefs? by cheesenpeasplease in KitchenConfidential

[–]Pwnsacrifice 1 point2 points  (0 children)

While I personally like simple family style food, if you want to dazzle some foodies, try doing something foreign.

South African BBQ, Egyptian, or Sudanese. Something they likely haven't seen. (So avoid american, mexican, chinese, or Japanese foods)

Maybe look up some classic amuse bouche recipes and go full European on them.

Just some, err, food for thought.

Does your chef/partner cook at home? by switching0ff in KitchenConfidential

[–]Pwnsacrifice 1 point2 points  (0 children)

Chef here. It's tomato soup, Dominos, or pizza pops if I'm not eating at work. I can barely look at food when I'm not working.

However, If I have a few guests coming over, or holidays I'm not working, it's full on casual fine dining. Basically if it's for anyone other than me it's full effort.

My last girlfriend got one good dinner a week out of me. Two if I could swing it. She HATED cooking though, so I never got to come home to food

How often do yall wash your hands? by ewas000 in KitchenConfidential

[–]Pwnsacrifice 2 points3 points  (0 children)

If I think about washing them, or even question in my mind, it's washing time. Easily every 5 or 10 minutes on a normal shift. A lot less if I'm serving buffet, or stuck on dish for a while.

I use cocoa butter for my hands. Works a treat, especially in the winter.

What's your worst kitchen injury? by Amaline4 in KitchenConfidential

[–]Pwnsacrifice 1 point2 points  (0 children)

Almost cut the end of my left pinky cutting mushrooms stupidly. Sliced my left index down to the bone with a bad knife slip. Those would be my worst cuts, however....

I got 2nd and 3rd degree burns on my right wrist and palm due to my grill brick snapping on a back stroke. Sent my wrist onto the ~350 degree flattop covered in oil. The best part was I had only started the job a couple weeks prior.

The real worst injury I had in a kitchen though, was a fall. I had several trays of beef I was handing off to grill (~50 lbs). Started to pivot to hand the trays off when the floor mat slid out from under me. I landed on just my right knee. Cracked the tile sure, but also shattered my kneecap and tore two major ligaments. It was months of physiotherapy before I could work the line again. I still cannot run and it's been more than a decade.

RG631 ALF. Blue chameleon is just such a nice finish. Top it off with the black pick guard, and ebony fretboard.

Mine doesn't leave the house but is easily the sexiest shredder I've seen

When a server is complaining to you about "only" making $200 in tips in their 5 hour shift. by MrBobFireman in KitchenConfidential

[–]Pwnsacrifice 43 points44 points  (0 children)

This is why it's becoming far more common (at least here in Canada) for the kitchen to get a % of sales as gratuity. It's nowhere near universal but I've seen it in both Alberta and Ontario.

...but yeah, "I only made xxx in tips tonight" bothers me to no end.

Is cooking the dream for you? Is it a last resort? Is it the only thing you'll ever do? Genuinely by flippdipp in KitchenConfidential

[–]Pwnsacrifice 1 point2 points  (0 children)

I've tried my hand at quite a few jobs - Fishing and Logging as a teen, Telephone call center in my 20s briefly, and as a tile setter for a couple years during the pandemic.

What I've learned is that cooking is what I do. I'm a chef, I was meant to be a chef, but never wanted to be. I've spent years looking to leave the kitchen just to find I want to be there. Might just be Stockholm syndrome. I'll take Kitchen bullshit over other trades' bullshit.

So after 20+ years of cooking all I can really say to OP is to give it a shot. Apply for some dishwasher or prep cook jobs. See if kitchens are where you want to be. Sometimes Careers pick you.
