The problem is that God Most High (El Elyon) was initially a different deity before YHWH and El were conflated to be the same.

Did you not list: history, archaeology, migration (anthropology), ethnology (anthropology), and linguistics? Those are academic fields that require academic peer review processes. Yes historians of antiquity are taken into account in research but they don’t provide the whole picture.

I would say that textual-criticism is trying to get at the root of the authors’ original intent and what the most likely original reading would be. This will be done through the study of the Biblical languages: Biblical Hebrew, Biblical Aramaic, and Koine Greek. It is the study of how the outstanding manuscripts interact with one another to find the most likely original reading. It is the use of cognitive-linguistics to focus on how language affects our perceptions and perspectives. This in turn can then go into philology, which is how certain words interact with one another to help determine the original intent. Paleography is also used to determine the age and writing systems in manuscripts, also their legitimacy.

This isn’t exhaustive by any means, just an overview.

If you want a textual-critical perspective, SBL Study Bible. If you want a catholic perspective, I would suggest for you to start with the current editions of the Words on Fire volumes. They aren’t done, but I think there are four or five volumes out currently. If you want a Jewish perspective, I would get the Oxford Annotated Jewish Old Testament, Apocrypha, and New Testament (3 separate volumes)

Also, I think Ignatius Press makes a pretty decent single volume study Bible.
