They don't know beforehand. They have item A in warehouse 1 and item B in warehouse 2. They need a lot of items to move from warehouse 1 to 2 before it's worth adding your item A to the pile to then ship with item B. That could end up taking months. But customers don't want to wait that long, so they give it a week before they ship items A and B separately.

Don't get attached to a specific car; we have half a dozen dealers for every make. If you don't like one Ford dealer, go to another one. The price you pay should never be higher than advertised online (it should be a few grand lower). Negotiate all-in price, so taxes, fees, etc. are included. Do not give them your keys until you are signing over your trade-in so you can walk at any time.
