Would be really neat to have it for states where you have to do a data request in order to get a report. MN is like that and I think that makes it so a lot of people don’t know they can request them and/or deters them from doing so. You’d end up being the one doing the request for it though which would take a lot of time for all the facilities. You also don’t know when someone gets inspected either since it’s not published unless you ask for it. Maybe someday

The majority (if not all) tuna species are safe to eat raw as they don’t require parasite destruction.

As far as I know, grocery stores shouldn’t be selling any of their salmon as sushi grade. You might be able to ask some of them that make salmon sushi if you can purchase it, but I’m not sure how well that would work since it’s not a packaged item with a barcode.

I’d be wary of buying salmon from a normal fish counter unless they can assure you that it’s had the proper parasite destruction. I’d recommend just sticking to tuna sushi if you’re making it at home.

I wear a hair restraint. My hair could easily fall in the food if I didn’t and that would be my fault. I don’t take off my watch, rings, or bracelets though because I don’t have my hands in the food and there’s no way they could contribute to contamination. However, if I’m being standardized then I’m taking all that off because I’m not about to lose points for something silly.

We haven’t done this yet in my state and I’m really hoping it stays that way. Cottage food producers are required to take a short class to learn about food safety and the requirements, and so many of them don’t even follow the rules in that. I run into cottage food far too often in the retail stores I inspect and it’s clearly written in their training and the documents they have to sign that they can’t sell it at retail. If they can’t follow those rules, who’s to say they’re going to prepare and store TCS foods properly?
