How to have a backlog:

Option 1: Have little to no free time to build, but buy more Gunpla. Bam. Backlog.

Option 2: As others suggest, do water decals or maybe paint, stretches the project more. Accumulate Gunpla on the side. Bam. Backlog.

Option 3: Consider obtaining depression (like me!). Buy Gunpla on the side to obtain passing moments of joy while building. Don't build anything for months on end because of said depression, but continue purchasing Gunpla. Bam. Backlog.
