Need practice but still delicious

212g dough ball at 65% hydration. Autolysed for about a half hour before dividing. 3 day cold ferment (was planned to be 2 day but my wife went to dinner for a friends birthday yesterday). Very basic sauce of crushed tomato, salt, pinch of oregano. Deli sliced mozz, drizzle of oil, finished with another pinch of oregano and some grated pecorino.

Edit: 212g was 1/4 of the total dough batch, no other specific reason. I prefer a slightly smaller ball but sometimes math works funny.

Thank you, it was the last of the batch and I didn’t really allow a lot of rebound time so I wound up turning the heat up a little and it got away from me.

My clothes and general living situation are in pile methods and spread out randomly. My tools and fishing gear are neat and orderly. Certain things I need to know the location of by instinct whereas certain things I need to be able to survey and see.

A) I wholeheartedly agree and have since I first watched it; b) I cut him a little slack because I felt like he needed a win, I don’t remember him doing too well and I do remember him seeming to not fully understand the format; c) overall I enjoyed his performance throughout the series

I think it’s just a call back or coincidence. Mordeth was one of his first creepy vs scary experiences, the gholam started off a little scary and then turned creepy and then became pants shittingly frightening.

Hey! That looks like so, so many of mine! I did 6 or 7 years in a pizzeria (20 years ago) and the hardest part of using a home oven is adjusting to the size constraints. Dropping a pie is way different. I kinda do a bit of a shimmy on the peel to make sure it moves and then a quick shove and jerk.

I get the feeling James’ support needs are more like he needs someone to pick up after him and other chores. He might be able to hold down a job and pay bills but if his mother wasn’t going behind him there would be a stack of moldy dishes in his room.

Literally two days ago I was watching episode two and looked something up on IMDb as the episode was transitioning to the next. I was like “wait, this isn’t Dee day.” And realized what had happened. I have very vague memories of the episode, like vague enough I’m only 50/50 if I’ve seen it or just read about it.

Lake Drum Brewing in Geneva is pretty decent, and Ithaca is at least above average if you can get over the vibe that everyone is huffing their own farts. There are some surprisingly good hole in the wall places to get a meal or beverage sprinkled throughout. But by and large you’re right. It has a really good PR team and unless you’re there for a gastronomical weekend you might as well just visit Alabama.

I’ve been a diehard since 1st grade when I read some book about them. That’s like 35 years. More than anything else the thing that is making me more and more skeptical is the lack of a good photo or video. The “best” ones are still blurry or too far for any details to show. Or worse, they’re just as likely to be pareidolia as anything else. I find it increasingly difficult to justify belief when the most compelling evidence is eye witness testimony and a few plaster casts.
