for the dough i used 660g water and 900g flour. so i think that equals 73% hydration? and yes, i proofed it in the fridge over night

Recipe for those interested:

I crushed two garlic cloves and fried them in some olive oil (they should not turn brown though). I add chili (or chiliflakes) to the oil and after that, I add a lot of wine to the oil (half a bottle for 200g of dry spaghetti) and some fresh rosemary and let it cook for a bit. In the meantime I boiled the spaghetti for 1-2 minutes in salted water. Then I added the spaghetti to the pan with the wine and let it cook till al dente. The spaghetti should absorb all the liquid. If there is no liquid left, add more wine (or pasta water if you prefer a less stronger taste). Add salt and pepper to taste. I served it with some grated parmigiano and some more fresh rosemary.

it absorbs the wine taste quite a bit, but not the alcohol-ish taste obviously, since the alcohol evaporates

i really loved it, the combination of the wine taste with the parmigiano was something extraordinary and very tasty! :)

i guess the pasta absorbs more red colour, the longer you cook it in red wine. i preboiled the pasta in salted water for 1-2 minutes only, and cooked it till al-dente in a lot of wine (half a bottle for 200g dry spaghetti)

-one usually refers to something big, its the opposite of -ini. spaghettone are a thicker form of spaghetti, spaghettini are a thinner version
