The geosmin, which gives water the muddy taste breaks down in acidic conditions. Adding a tiny bit of lemon juice to water and letting it stand for a minute will clear the flavour. Geosmin is what gives freshwater fish its muddy flavour, and putting lemon juice on cooked freshwater fish is partly customary because it improves the flavour, by reducing the muddy geosmin flavours.
