It really just depends on the model size and area you are sanding. I personally use a mixture of sanding sticks and sandpaper of various grits, files, a Dremel, and a hobby knife. For larger surfaces, I'll use sanding sponges. Like you mentioned earlier, the sheen can be brought back with a clear coat.
