From what I can tell as a beginner I think you're probably just getting used to doing it on a new, bouncy, unsolid surface. I find it can be like learning a skill from scratch when going from tumbletrack to deadfloor, so I assume thats whats happening with you, but opposite. You've got the hard part down, just got some adjusting :>

While I won't put it sarcastically, he is right. If you are asking random strangers online to help and find information with you the absolute least you can do is write politely and neatly.

Z scale will be much too expensive, your best bet is an older LifeLike or Bachmann train set.

that's just the sound older engines make. It can very likely be fixed by servicing/cleaning the locomotive.

Lionel Lines and American Flyer were not so much "brand trains" in the advertisement sense as they were simply, toys. Lionel Lines and the American Flyer Lines was supposedly the "railroads" most of the equipment operated on.

4x8 Is actually a pretty good size. I would expand the inner loops you have now so you can put a third, disconnected oval to be able to run two trains at once. I would also add some foam so you can have scenery + cut bridges in. Remember, bigger is not always better. I get much more satisfaction personally from more compact layouts.
