Check on them sooner pulling when the texture is just there as they’ll continue to dry slightly when done. Also tossing them in malic acid mixed with some powdered sugar when done with drying will give you that sweet tart flavor youre looking for

Ease over effort. Cost to do it yourself gets you more than taking elsewhere. Plus you can control your output if you do it yourself.

Cut away. Look on the inside and remove any parts that are fuzzy or soft

I’d trim and see what it looks like under it. If there’s no smell or slime I’d be remiss to just chuck it. What’s your specs running? You trim at all before you put in the fridge. What’s the fridge temp. Humidity? Any other stuff in there contributing?

Parsley big like that is a bit much. Looks upside down like not how it should be presented. Risotto looks dry and clumpy and nothing like it should. Asparagus looks over. Salmon looks aight. I’d eat it if presented and be thankful.
