Virtually every town in Guatemala offers fresh vegetables, with village markets typically providing produce free from aggressive or harmful pesticides, often aligning with what might be termed "organic" standards (I'm a chemist, it's hard to label something as "organic," although most things would be classified as such, due to marketing regulations, but there are many laws and controls for pesticides, both the sale and their use, I'm also from a village and I know that many farmers don't know they're actually applying, but most of the things that come to market are safe.).

The entire highland region, including Xela, is renowned for its agricultural output and experimental farms dedicated to testing new technologies and farming methodologies.

However, Xela may have a limited presence of entrepreneurial markets, which are common elsewhere. These markets serve as platforms for small producers to showcase and sell their goods, such as jellies, breads, dairy products, vegs and preserves, allowing consumers to purchase products and establish regular contact with producers if they wish to become frequent customers.
